Hearts are roasted in underground pits lined with volcanic rock, imparting the signature smoky character. Once roasted, the agave is crushed—often with a stone tahona—and the mash is left to ferment naturally.

Distillation occurs in copper or clay pot stills, with small batch runs carefully monitored to capture the heart of the spirit. Resting may take place in glass or neutral containers to settle the flavors before bottling.

It was founded in the early 2000s by John Rexer, who at the time was running a bar in Antigua, Guatemala. He started smuggling small batches of mezcal from Oaxaca to serve at his bar — literally “illegal” mezcal — and the name stuck. What began as a bootleg operation quickly evolved into a legitimate brand, but it has never lost that sense of edge and authenticity.

The mezcal itself is crafted in Oaxaca, Mexico, using 100% espadín agave. Production follows traditional methods: the agave hearts are roasted in underground pits, crushed with a tahona stone, naturally fermented, and distilled in small copper stills. This keeps the flavor smoky, earthy, and true to mezcal’s roots. The brand offers joven, reposado, and añejo expressions, each one showing different layers of agave character and oak influence.
