Yeni Raki is a distinctive and iconic Turkish unsweetened, anise-flavored spirit, traditionally made from distilled grapes and grape pomace, and often matured in oak barrels. When neat, on the nose, it offers a subtle but complex aroma that hints at grape spirit with a very faint whisper of anise. However, its true character emerges when water is added. Upon dilution, it transforms, releasing a powerful and pure aroma of star anise and licorice, along with a delicate grapey sweetness and a touch of herbal notes. The palate, when neat, is strong and fiery, showcasing the robust grape spirit. With water, it becomes exceptionally smooth and milky white (the "lion's milk" effect), delivering a concentrated burst of intense star anise and licorice flavor. This is beautifully balanced by a subtle sweetness from the grapes and a refreshing herbal complexity. The finish is long, warming, and distinctly anise-laden, leaving a lingering, clean licorice essence that refreshes the palate.
Yeni Raki is a culturally significant drink in Turkey and is almost exclusively enjoyed with food, particularly mezes (small appetizers) and traditional Turkish cuisine. It is traditionally served chilled, diluted with chilled water (which turns it cloudy), and sometimes with ice (added after water to avoid crystallization). For food pairings, its strong anise flavor and refreshing properties make it an exceptional companion to a vast array of mezes, including white cheese (feta-style), melon, olives, grilled octopus, fried calamari, fresh salads, and various vegetable dishes. It also pairs beautifully with grilled fish, seafood platters, and lighter kebabs. Its anise character cuts through fatty dishes and cleanses the palate, making it ideal for a long, leisurely meal with many small plates. Avoid overly sweet desserts, as they can clash with its dry, anise-forward profile.
