Don Julio - Anejo Tequila is made from 100% Blue Weber agave cultivated in Jalisco, harvested only when fully mature. Piñas are slow‑cooked to convert inulin into fermentable sugars, then crushed to release the sweet juice.

Fermentation proceeds in stainless steel tanks with natural or selected yeasts before the wash is distilled, typically twice, in copper pot stills or stainless steel columns. For reposado and añejo styles, the spirit rests in oak barrels, where it develops additional complexity while keeping agave character at the forefront.

Production is carried out with respect for tradition and modern quality standards, yielding a tequila that reflects discipline and heritage.

Don Julio Añejo Tequila is a sophisticated and richly flavored spirit, meticulously aged to achieve a profound depth and complexity. On the nose, it offers an inviting bouquet of rich cooked agave, decadent caramel, and sweet vanilla, beautifully interwoven with prominent notes of toasted oak, dried fruits like apricot and fig, and warm spices such as cinnamon and nutmeg. A subtle hint of dark chocolate and a whisper of tobacco leaf add further intrigue. The palate is exceptionally smooth and full-bodied, delivering a luxurious tapestry of flavors. Sweet, caramelized agave leads the way, followed by layers of butterscotch, rich dark chocolate, roasted coffee, and a gentle nuttiness. The well-integrated oak provides structure and hints of spice, culminating in a long, elegant, and exceptionally warm finish that lingers with notes of dried fruit, vanilla, and a gentle oak spice.
This Añejo Tequila is a superb sipping tequila, best enjoyed neat or with a single large ice cube to slowly unlock its complex aromas and flavors. For food pairings, its richness and depth allow it to stand up to more robust and savory dishes, often bridging the gap between a fine whiskey and a traditional after-dinner liqueur. For appetizers, consider richer options such as mole poblano-glazed duck tacos, slow-cooked short rib sliders, or even a sophisticated cheese board featuring aged cheddar, smoked Gouda, or a rich blue cheese. For main courses, it's an exceptional companion to grilled or roasted red meats like a well-marbled ribeye, lamb shank, or game meats. Its caramel and spice notes can also complement rich mole dishes, complex cochinita pibil, or slow-braised pork belly. For dessert, it's a sublime pairing with dark chocolate confections, churros with chocolate sauce, pecan pie, or even a rich crème brûlée, where its vanilla and caramel notes find harmony. It can also be savored as a digestif after a fine meal.
