Hillrock Estate - Solera Aged Cabernet Cask Finish Bourbon is produced in California with fruit sourced from vineyards selected for balance and varietal clarity. Hand harvesting and small‑lot vinification allow careful control of fermentations, with an emphasis on clean extraction and preservation of fruit integrity.

Fermentation is conducted in stainless steel or small open‑top tanks, depending on the varietal, with pump‑overs or punch‑downs managed to achieve structure without harshness. Aging takes place in a mix of French and American oak barrels, where time in wood refines texture and brings added complexity without masking the grape’s natural profile.

Each vintage reflects a commitment to sustainable vineyard practices and precise cellar work, yielding a wine that stands as a faithful expression of both varietal and region.

Hillrock Estate

Hillrock Estate Distillery is a pioneering American craft distillery located in the Hudson Valley of New York, known for producing some of the first true “field-to-glass” whiskeys in the United States. Founded by Jeffrey Baker, a venture capitalist and longtime whiskey enthusiast, Hillrock was established with the vision of reviving Hudson Valley’s deep agricultural and distilling traditions. From the outset, the estate has emphasized complete control over the process—growing its own grain, malting on site, distilling, and aging—making it one of the most vertically integrated distilleries in the country.

What sets Hillrock apart is its dedication to practices that most modern producers have long abandoned. It operates one of the few traditional floor malt houses in the U.S., allowing it to malt its own grain by hand in small batches. The distillery also became famous for its solera-aged bourbon, a unique innovation in American whiskey. Borrowed from sherry and brandy traditions, the solera system continuously mingles older and younger whiskey, creating remarkable consistency and layered complexity in every bottling.

The portfolio includes a range of spirits—bourbon, rye, single malt, and limited specialty releases—all designed to highlight craftsmanship, terroir, and innovation. Under the guidance of the late Dave Pickerell, one of the most respected master distillers in America, Hillrock quickly built a reputation for excellence and for pushing the boundaries of what American whiskey can be.

As a brand, Hillrock Estate represents authenticity, heritage, and a meticulous commitment to quality. It bridges America’s agricultural roots with modern whiskey innovation, offering spirits that are not only premium in flavor but also transparent in origin. By producing whiskey literally from the soil of its own fields to the glass, Hillrock has carved out a place as one of the most respected names in craft distilling, embodying both tradition and forward-thinking artistry.
