Redbreast - Irish Whiskey 12 Year is produced in the United States using a mash bill built around grains such as corn, rye, and malted barley. The mash is cooked and fermented before being distilled, often in copper column or pot stills.

Maturation takes place in new, charred American oak barrels, where seasonal temperature swings drive spirit deep into the wood, extracting color and complexity. Warehouse management and barrel selection are critical, with blenders assembling lots that best represent balance and structure.

The result is a whiskey shaped by grain, oak, and time, reflecting both traditional craft and rigorous quality control.

Redbreast

Redbreast is a revered brand of single pot still Irish whiskey, widely regarded as the definitive expression of this classic style of Irish distilling. Single pot still whiskey is unique to Ireland and is made from a mash of both malted and unmalted barley, which is then triple-distilled in copper pot stills. This process results in a whiskey known for its rich, creamy texture and a distinctive spicy character.

The history of the Redbreast brand is a long one, dating back to 1912. It was originally a product of W. & A. Gilbey, a Dublin spirits merchant that sourced its whiskey from the famous Jameson distillery. The name "Redbreast" is said to have been coined by the chairman of Gilbey's, who was an avid birdwatcher, in reference to the European robin.

After a decline in the Irish whiskey market, the brand was eventually acquired by Irish Distillers, the company that also produces Jameson, and was relaunched in 1991. The revival of Redbreast helped to spearhead a resurgence of interest in single pot still whiskey. Today, the brand's core range includes a 12-year-old expression, along with more premium offerings like a 15-year-old, a 21-year-old, and a cask strength version, all of which are known for their exceptional quality and complex flavor profiles, often matured in a combination of bourbon and sherry casks.
